Ingredients
For the Pork Tenderloin:
1 R Family Farms pork tenderloin (about 1 lb)
2 tbsp olive oil
2 cloves garlic, minced
1 tsp fresh rosemary, chopped
1 tsp fresh thyme, chopped
Salt and pepper to taste
For the Roasted Vegetables:
1 lb baby potatoes, halved
1 cup baby carrots
1 red bell pepper, sliced
1 small red onion, cut into wedges
2 tbsp olive oil
1 tsp balsamic vinegar
Salt and pepper to taste
Fresh rosemary and thyme for garnish
Instructions
Preheat the Oven: Preheat your oven to 400°F (200°C).
Prepare the Pork Tenderloin:
Rub the pork tenderloin with olive oil, garlic, rosemary, thyme, salt, and pepper.
Heat a skillet over medium-high heat. Sear the pork on all sides for 2-3 minutes per side until golden brown.
Transfer the pork to a baking dish and set aside.
Prepare the Vegetables:
In a large bowl, toss the potatoes, carrots, bell pepper, and onion with olive oil, balsamic vinegar, salt, and pepper.
Spread the vegetables around the pork tenderloin in the baking dish.
Roast: Place the baking dish in the oven and roast for 20-25 minutes, or until the pork reaches an internal temperature of 145°F.
Rest and Serve: Let the pork rest for 5-10 minutes before slicing. Serve slices of pork tenderloin with the roasted vegetables, garnishing with fresh rosemary and thyme.
