Ingredients

For the Pork Tenderloin:

  • 1 R Family Farms pork tenderloin (about 1 lb)

  • 2 tbsp olive oil

  • 2 cloves garlic, minced

  • 1 tsp fresh rosemary, chopped

  • 1 tsp fresh thyme, chopped

  • Salt and pepper to taste

For the Roasted Vegetables:

  • 1 lb baby potatoes, halved

  • 1 cup baby carrots

  • 1 red bell pepper, sliced

  • 1 small red onion, cut into wedges

  • 2 tbsp olive oil

  • 1 tsp balsamic vinegar

  • Salt and pepper to taste

  • Fresh rosemary and thyme for garnish

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).

  2. Prepare the Pork Tenderloin:

    • Rub the pork tenderloin with olive oil, garlic, rosemary, thyme, salt, and pepper.

    • Heat a skillet over medium-high heat. Sear the pork on all sides for 2-3 minutes per side until golden brown.

    • Transfer the pork to a baking dish and set aside.

  3. Prepare the Vegetables:

    • In a large bowl, toss the potatoes, carrots, bell pepper, and onion with olive oil, balsamic vinegar, salt, and pepper.

    • Spread the vegetables around the pork tenderloin in the baking dish.

  4. Roast: Place the baking dish in the oven and roast for 20-25 minutes, or until the pork reaches an internal temperature of 145°F.

  5. Rest and Serve: Let the pork rest for 5-10 minutes before slicing. Serve slices of pork tenderloin with the roasted vegetables, garnishing with fresh rosemary and thyme.
