Ingredients:
4 bone-in R Family Farms pork chops (1 to 1.5 inches thick)
2 tbsp olive oil
Salt and pepper, to taste
For the BBQ Marinade:
1/2 cup ketchup
1/4 cup apple cider vinegar
2 tbsp honey or brown sugar
2 tbsp Worcestershire sauce
2 tbsp Dijon mustard
2 cloves garlic, minced
1 tsp smoked paprika
1/2 tsp cayenne pepper (optional, for heat)
1/2 tsp black pepper
1/4 tsp salt
Instructions:
Prepare the Pork Chops:
Rub the pork chops with olive oil and season both sides with salt and pepper. Set aside.Make the BBQ Marinade:
In a bowl, whisk together ketchup, apple cider vinegar, honey (or brown sugar), Worcestershire sauce, Dijon mustard, minced garlic, smoked paprika, cayenne pepper (if using), black pepper, and salt. Mix well until smooth.Marinate the Pork Chops:
Place the pork chops in a resealable plastic bag or a shallow dish. Pour half of the BBQ marinade over the pork chops, ensuring they are well-coated. Marinate in the refrigerator for at least 1 hour (or up to 4 hours for deeper flavor).Grill or Pan-Sear the Chops:
Grilling: Preheat your grill to medium-high heat. Remove the pork chops from the marinade and discard the excess. Grill the pork chops for 5-6 minutes per side, brushing occasionally with the reserved marinade, until the internal temperature reaches 145°F (63°C).
Pan-Searing: Heat a large skillet over medium-high heat. Add a little olive oil, then sear the pork chops for 4-5 minutes per side, basting with the reserved marinade, until they reach 145°F.
Rest and Serve:
Once the pork chops are cooked, remove them from the heat and let them rest for 5 minutes before serving.Serve with Extra BBQ Sauce:
Serve the chops with any remaining BBQ marinade on the side for dipping, along with your favorite sides like coleslaw, roasted vegetables, or corn on the cob.
Tips:
For extra tenderness, you can brine the pork chops for 30 minutes to an hour in saltwater before marinating.
Add a smoky flavor by using wood chips on the grill.
Enjoy these juicy and flavorful BBQ pork chops, perfect for a fall cookout!
