Pork Loin with Apple Cider Glaze

Ingredients:

  • 2 lb pork loin (from R Family Farms)

  • 1 cup apple cider (preferably fresh)

  • 2 tbsp apple cider vinegar

  • 2 tbsp honey

  • 2 tbsp Dijon mustard

  • 2 tbsp unsalted butter

  • 1 tbsp olive oil

  • 2 sprigs fresh rosemary (plus more for garnish)

  • 2 apples (sliced)

  • 1 large onion (sliced)

  • Salt and pepper (to taste)

Instructions:

  1. Preheat Oven:

    • Preheat your oven to 375°F (190°C).

  2. Sear the Pork Loin:

    • Season the pork loin generously with salt and pepper.

    • Heat olive oil in a large oven-safe skillet over medium-high heat.

    • Sear the pork loin on all sides until golden brown (about 3-4 minutes per side). Remove from heat and set aside.

  3. Prepare the Glaze:

    • In a small saucepan, combine apple cider, apple cider vinegar, honey, Dijon mustard, and fresh rosemary.

    • Bring to a simmer over medium heat, stirring occasionally. Let it cook until reduced by half (about 10 minutes). Remove rosemary sprigs and set the glaze aside.

  4. Roast the Pork:

    • In the same skillet, add the sliced apples and onions, creating a bed for the pork loin.

    • Place the seared pork loin on top of the apples and onions.

    • Brush the pork with some of the apple cider glaze, reserving the rest for later.

    • Transfer the skillet to the preheated oven and roast for 25-30 minutes, or until the internal temperature of the pork reaches 145°F (63°C).

  5. Finish with Glaze:

    • Remove the pork from the oven and brush it generously with more apple cider glaze.

    • Let the pork rest for 10 minutes before slicing.

  6. Serve:

    • Slice the pork loin and serve it alongside the roasted apples and onions.

    • Drizzle with any remaining apple cider glaze and garnish with fresh rosemary sprigs.
