Pork Loin with Apple Cider Glaze
Ingredients:
2 lb pork loin (from R Family Farms)
1 cup apple cider (preferably fresh)
2 tbsp apple cider vinegar
2 tbsp honey
2 tbsp Dijon mustard
2 tbsp unsalted butter
1 tbsp olive oil
2 sprigs fresh rosemary (plus more for garnish)
2 apples (sliced)
1 large onion (sliced)
Salt and pepper (to taste)
Instructions:
Preheat Oven:
Preheat your oven to 375°F (190°C).
Sear the Pork Loin:
Season the pork loin generously with salt and pepper.
Heat olive oil in a large oven-safe skillet over medium-high heat.
Sear the pork loin on all sides until golden brown (about 3-4 minutes per side). Remove from heat and set aside.
Prepare the Glaze:
In a small saucepan, combine apple cider, apple cider vinegar, honey, Dijon mustard, and fresh rosemary.
Bring to a simmer over medium heat, stirring occasionally. Let it cook until reduced by half (about 10 minutes). Remove rosemary sprigs and set the glaze aside.
Roast the Pork:
In the same skillet, add the sliced apples and onions, creating a bed for the pork loin.
Place the seared pork loin on top of the apples and onions.
Brush the pork with some of the apple cider glaze, reserving the rest for later.
Transfer the skillet to the preheated oven and roast for 25-30 minutes, or until the internal temperature of the pork reaches 145°F (63°C).
Finish with Glaze:
Remove the pork from the oven and brush it generously with more apple cider glaze.
Let the pork rest for 10 minutes before slicing.
Serve:
Slice the pork loin and serve it alongside the roasted apples and onions.
Drizzle with any remaining apple cider glaze and garnish with fresh rosemary sprigs.
