Chorizo Nachos
Anyone out there have cravings for chorizo?
No? Just me?
Well, it happens sometimes. When I’m ready for a little bit of heat and pork chocked full of delicious spices, I head to the chorizo to make everyone happy. And what’s even better than pork that is fully spiced and requires little to no prep? An easy supper ready in 30 minutes or less!
Chorizo Nachos
1 Pound R Family Farms Chorizo
1 Bag of your favorite tortilla chips
1 1/2 cups shredded cheese (we use the Mexican style mix)
1 can black beans, drained and rinsed
1/2 cup diced onion
1/4 cup of your favorite peppers
Optional other toppings:
Lettuce
Green onion
More peppers
Prepared Cheese Dip
Sour Cream
Guacamole
Salsa
Pre-heat oven to 350 degrees. Add chorizo and half of onion to a medium pan. Brown until fully cooked. Drain and rinse black beans and add to the chorizo and onion mixture. Heat until warmed through, about 3 minutes.
Line a sheet pan with tin foil. Layer half of bag of tortilla chips onto the tin foil. Add half the chorizo, bean and onion mixture, half the cheese, and half of the peppers. Layer the rest of the chips on top, and add the other half of the chorizo and bean mixture, cheese and peppers.
Cook in oven until cheese is melted - around 15 minutes.
Remove from oven and finish topping with your favorite optional toppings and enjoy!
